If you are using uncooked yakisoba noodles, start by cooking them. Bring a pot of water to a boil. Add uncooked yakisoba noodles and cook for 3-5 minutes (check your noodle package for cooking time recommendations). Set the cooked noodles aside.
Add Mix all ingredients for Homemade Yakisoba Sauce (★) in a bowl. Set aside.
Cut the carrot, onion, lettuce/cabbage (your choice), and scallions. Set aside.
Make the Yakisoba
Heat oil or vegetable oil in a large skillet on medium heat.
Add onion and stir fry until it becomes transparent. Then add the remaining vegetables (carrot, lettuce/cabbage) and stir fry again.
Add pork bacon or other meat in your choice next. Stir fry with the vegetables.
Add the cooked yakisoba noodles. Untangle the noodles with the wok and mix with the vegetables for about 1 minute.
Once the noodles become a bit crispy (to your preference), pour the prepared yakisoba sauce. Then, give them a good mix.
Season with salt and pepper. Continue to cook until all ingredients are mixed well with the sauce.
Serve the hot yakisoba into plates.
Top with gari (pickled ginger) and scallions. Enjoy!

Feel free to mix with your favorite vegetables and proteins. Seafood Yakisoba with shrimp, squid, and calamari is also one great choice!Vegan-style Yakisoba is also delicious nevertheless because we can get the full umami from the sauce.
