Do you know that Amazake can be a secret ingredient for making teriyaki? Adding Amazake to chicken teriyaki will add natural sweetness and tenderness to the finished dish. Not only that, but the smell will also improve because of the well-balanced umami flavor.
Poke holes in the chicken meat with a fork so it will absorb the amazake marinade better. Then season the chicken with salt.
Pour 3 or more tablespoons of amazake, soy sauce, and mirin onto the chicken and let marinade for 30 minutes. You can also let it marinade for 1 hour for optimal taste.
Heat up the pan, then cook both sides of the chicken pieces over low heat. Do not use too much heat as koji in the amazake marinade can easily cause charring on the chicken.
After both sides are thoroughly cooked (or until golden brown), add the remaining marinade sauce to the fry pan and let simmer over medium heat.
