Wipe the mushroom with a kitchen cloth or lightly rinse in cool water (only if they’re really dirty) and pat dry with a paper towel.
Heat oil until surface begins to shimmer slightly.
Stir-fry the mushrooms and put the salt, garlic, and shoyu koji, combine with the mushroom until the mushrooms becomes golden brown. Add cooking wine and continue to stir-fry for about 20 seconds.
Put on the plate and sprinkle some toasted black sesame seeds on top and it's perfect!
