About Shoyu Koji

Shoyu koji (醬油麹) is an aged pasty sauce made with Shoyu that is perfectly fermented with rice koji. Usually, the fermentation process takes about a week to ten days hoping that the koji will completely absorb the contents in the shoyu.

If we compare it with the regular shoyu, this shoyu koji is considered more affluent in umami and has a deep taste of koji. And, it is said that you’ll taste ten times more delicious than the regular shoyu! Surprising, isn’t it? With a small amount of Shoyu Koji, it is enough to develop the burst of umami.

Regarding how to use it, you don’t need to be confused because shoyu koji goes excellent with any dish that you would typically use shoyu for. The versatile nature of shoyu koji allows it to be used as seasoning/topping, mixed with natto, and marinating for fried food.

Stir-fried Mushrooms

Serve this tasty mushroom with your main dish on your table at night. Surely it will make powerful combination because of it's deep rich flavor!

Ingredients
  

  • 300 g Eryngii or Shimeji mushroom
  • 2 tbsp Shoyu Koji
  • 1 tsp Sesame oil
  • cup Cooking wine (if you like)
  • 2 cloves Garlic (minced)
  • as your preference Salt
  • as your preference Toasted black sesame seeds

Instructions
 

  • Wipe the mushroom with a kitchen cloth or lightly rinse in cool water (only if they’re really dirty) and pat dry with a paper towel.
  • Heat oil until surface begins to shimmer slightly.
  • Stir-fry the mushrooms and put the salt, garlic, and shoyu koji, combine with the mushroom until the mushrooms becomes golden brown. Add cooking wine and continue to stir-fry for about 20 seconds. 
  • Put on the plate and sprinkle some toasted black sesame seeds on top and it's perfect!
