Sencha Green Tea with Lemon & Honey Recipe

Sencha is one kind of Ryokucha (Japanese green tea) that uses only the first pluck of the tea leaves cultivated in the open air with plenty of sunlight. Because the harvested tea leaves are immediately steamed, rolled, and dried, sencha is rich in polyphenols and chlorophyll and has a relatively low caffeine content.

Steep the Sencha Green Tea

  • Pour the water into a kettle and bring to a boil.
    The ideal temperature to steep the sencha is 80°C or 176°F. Turn off the heat when the water boils, and wait until it reaches the ideal temperature.
  • Put 2 tablespoons (6-8 grams/ 0.2-0.3 oz) of sencha green tea leaves into the teapot and pour the hot water at 80°C or 176°F. You can also use tea bags if available.
  • Let it steep for around 30-60 seconds with the lid closed.

Make the Sencha green tea with lemon and honey

  • Once well-steeped, strain the tea leaves and pour the tea into the cups.
  • Add 1 teaspoon of lemon juice and 1 teaspoon of pure honey into the teacups, mix well. Enjoy!

Notes

This beverage is also delicious as iced green tea. To make an iced beverage, let the tea cool down at room temperature for 30 minutes and transfer it to the refrigerator for 30-60 minutes. Take out the ice tea and enjoy!
