Amazake-Marinated Grilled Salmon

Apart from its primary purpose of making a drink, did you know that amazake is also excellent for incorporating various foods?

Notably, we can also use amazake to marinade the main ingredients to make it more moist and tender. In addition to that, it also can eliminate the odor contained in the main ingredients that shouldn’t be neglected if we demand the highest taste from the food we make.

Salmon, as we know, it’s still a type of fish that has a distinctive odor.

However, it shouldn’t be considered a big deal anymore if the main ingredients is marinated enough with amazake before we proceed it. The odor will vanish certainly!

About Amazake

Amazake is a traditional Japanese beverage, essentially made from fermenting rice that has been consumed by Japanese people since the Ancient Kofun period (300 to 538 AD). 

Written as “甘酒” (甘 means “sweet” and 酒 means “sake”) in Japan, amazake can be literally translated to “sweet sake”. It is generally fermented by using Aspergillus Oryzae or can be called rice koji, which means this kind of amazake is alcohol-free and consumable by every age without any worries. 

Rice koji fermented amazake contains vitamin B1, B2, B6, folic acid, dietary fiber, oligosaccharide, cysteine, arginine, and glutamine, which significantly promote healthy skin and solve digestive problems. It is also such an energy boost to your brain because almost 20% of amazake nutritional components are glucose.

Amazake-Marinated Grilled Salmon

If you marinate the salmon in Amazake overnight before grilling, the enzymes in Amazake will prep the salmon to become very plump and delicious.
Although Amazake-marinated salmon is a common recipe in Japan, it is still little known worldwide. You won't regret the taste, so please try it by all means!

Ingredients
  

  • 2 slices Fresh Salmon Fillet about 250 gr
  • 60 cc Amazake
  • Cooking sake/cooking liquor Appropriate amount (adjust to the container)
  • Salt and Pepper A pinch
  • 1 sheet Zipper storage bag ziploc

Instructions
 

  • Soak salmon fillets in cooking sake in a bowl or container. Use proper amount of cooking sake until you can soak all of the fillets. Keep them in the refrigerator for about 20 minutes.
  • After 20 minutes, take the soaked salmon fillets out from the refrigerator, throw away the used cooking sake, and carefully wipe off the excess moisture from the salmon fillets with kitchen paper. Be careful to not break the fillets.
  • Prepare a zipper storage bag that can be sealed and pour the amazake in it. Arrange the salmon fillets in the bag so that they do not overlap, deflate the air out, and put them in the refrigerator again. Rest them in the refrigerator for one night.
  • After letting the salmon fillets marinated overnight, take them out of the refrigerator again and wipe off the excess moisture from the salmon fillets with kitchen paper carefully.
  • Sprinkle the salmon with salt and pepper in your liking.
  • Grill the marinated salmon, and it's done!

Notes

• Though amazake alone is effective in removing the odor of the salmon, but if you take the time to soak it in the cooking sake first and then cook it, the effect will improve and it will be more delicious.
• The baking time varies depending on the model of your grill/oven. Please be careful not to burn the salmon.
