How to Make Kombu Chicken Soup

- Gently clean the kombu with a damp cloth, remember not to remove the white powder as this is what contributes to the unique umami flavour of kombu.
- Add kombu and water into a sauce pan. Bring Kombu to a bare simmer for 10 minutes. Extract the water and filter it through a fine-mesh into another sauce pan.
- Add mirin, soy sauce, salt and sugar and mushroom into the broth and bring to a simmer for another 10 minutes. Cover the sauce pan with a lid. In the mean time, chop the chicken breasts and orka into smaller pieces, extract the corn kernels.
- Add the chicken breasts, spinach, carrots, corn kernels and orka into the broth. Cook for 5-7 minutes.
- The broth is ready for serving. Add in the roasted sesame seeds when served!
