How to Make The Classic Tofu Miso Soup

You can’t go wrong with the classic miso soup. The smooth soft tofu and wakame seaweed, perfectly combined with the warm savory miso broth. Just warm hearty goodness despite its simplicity. It’s a great side dish to enjoy all year round. 

Tofu miso soup is probably what you’ll find when you order miso soup in a Japanese restaurant. If this is your first time making miso soup, we recommend you make the classic one first to really get the basics. Once you understand how to make it, you can mix and match ingredients with different kinds of miso paste.

The Basic Tofu Miso Soup

By making miso soup by the right method, it will have the taste of a restaurant-class dish!
This recipe will be using mixed dashi packets with the Japanese traditional miso paste. The ingredients used will be as simple as possible so you can taste the authentic miso taste.

Ingredients
  

  • 1 Dashi Packet
  • 2 tablespoons Miso Paste (1 tablespoons: 15-16g)
  • 2 blocks Soft Tofu
  • 10 g Wakame Seaweed

Instructions
 

  • Make the Dashi Stock
    Put 1 packet of dashi pack (10g) to 800-1000ml water in a pot and bring to a boil. Remove the bag after few minutes. To make 2 servings, please only use 400 ml dashi stock.
  • Prepare the Ingredients and Add into the Pot
    Cut the tofu into small cubes. Then, add the tofu and wakame seaweed into the pot. Let it cook for 1 minute.
  • Add Miso Paste After Turning Off the Heat
    Lastly, turn off the heat and dilute the miso paste in a ladle and mix it into the soup. Miso aroma and good nutrients can evaporate in high heat. So it is recommended to add miso after you turned off the heat completely.

Notes

The tip when making miso soup is always to add the miso paste after turning off the heat, especially if you are using the Raw Miso/Unpasteurized Miso, which still promotes fermentation and contains a lot of prebiotics that will evaporate with high heat. Enjoy the miso soup full of nutrients while warm, and serve with other dishes.

Not a fan of soft tofu? You can use aburaage, or thin fried tofu.

Ingredients
  

  • 400 ml Dashi Stock
  • 1 tbsp Miso
  • 100 g Fried Tofu
  • 50 g Spinach

Instructions
 

  • Cut the spinach and fried tofu into small pieces
  • In a pot, boil the dashi stock. Add the spinach and fried tofu
  • Lower the heat or cut the heat completely. Dilute miso paste in a ladle then mix it into the soup
