How to Make Kombu Chicken Soup
This lovely soup recipe is flexible and can be made by changing the vegetables or source of proteins (i.e shrimp or fish). We hope this soup will keep you and your loved ones warm!
2chicken breastsYou could replace this with shrimps or fish
spinach
2 carrots
50grshiitake mushrooms
2tbsproasted sesame seeds
1corn

Instructions
Gently clean the kombu with a damp cloth, remember not to remove the white powder as this is what contributes to the unique umami flavour of kombu.
Add kombu and water into a sauce pan. Bring Kombu to a bare simmer for 10 minutes. Extract the water and filter it through a fine-mesh into another sauce pan.
Add mirin, soy sauce, salt and sugar and mushroom into the broth and bring to a simmer for another 10 minutes. Cover the sauce pan with a lid. In the mean time, chop the chicken breasts and orka into smaller pieces, extract the corn kernels.
Add the chicken breasts, spinach, carrots, corn kernels and orka into the broth. Cook for 5-7 minutes.
The broth is ready for serving. Add in the roasted sesame seeds when served!
