Japanese Eggplant Recipe Mirin

There are a few seasoning that plays a significant role in Japanese cuisine, which are Shoyu, Dashi, and Mirin. Shoyu refers to soy sauce and Dashi is usually used as broth and stock. How about Mirin? Mirin is rich in sweetness but definitely tastes different from sugar. It was frequently used in Japanese cuisine and usually collaborates well with other seasonings such as Dashi to bring out the flavor.

In this recipe, Mirin plays an important role as it give the rich taste of sweetness that other seasonings can hardly gives. This Japanese eggplant recipe is a famous family dish where people call them “Mugen Nasu” (無限ナス), it means “unlimited eggplants”, where they feel like they can eat this non-stop or unlimited with it because it’s too tasty!

Ingredients
  

  • 3 or 4 Eggplant
  • 2 tbsp Vinegar Optional
  • Some Scallion Optional
  • Olive Oil

Nimono Sauce/Stocks

Instructions
 

  • Wash the Eggplants and cut them in half vertically.
  • Score the skin of the eggplants. Make sure to avoid cutting it too deep.
  • Add 2 tablespoon of vinegar into a bowl of water, simmer the eggplants into that bowl of vinegar for about one minute.
    (This is to prevent eggplants against oxidation, but this is optional.)
  • Pour some oil into the pan, place the eggplants' skin down to the pan with medium heat. Heat both side evenly for around 4-5 minutes.
  • While cooking for eggplants, mix all the ingredients for Nimono sauce/Stock together and put it aside.
  • Cook the Nimono Sauce/Stocks by pouring into the pan until it start boiling.
    Then, cover with lid and simmer it with low heat for 8-10 minutes.
