This risotto recipe is a very delicious yet simple. Packed with healthy brown rice, plenty of veggies (micro tomato and asparagus), and soybeans. Moreover, it’s completely vegan.

Ingredients
  

  • 390 g Brown Rice (uncooked, short-grain)
  • 900 ml Vegetable broth
  • 1200 ml Water
  • 2 tbsp Olive oil
  • 1 cup Asparagus (cut to 2.5 cm each)
  • 1 cup Micro tomato
  • ½ cup Soybeans
  • 2 cloves Garlic (finely chopped)
  • 4 tbsp Onion (finely chopped)
  • Salt and pepper (to taste)

Instructions
 

  • Bring vegetable broth and water to a boil in a pan over high heat.
  • In the same pan, add the washed asparagus and soybeans. Bring the heat to medium heat and simmer until tender (3-4 minutes). Drain and set aside for later.
  • While waiting for the broth mixture to boil, heat olive oil in a skillet. Use medium heat. Cook and stir garlic and onion until softened and fragrant (about 4 minutes). Then, add and stir brown rice until toasted (about 5 minutes).
  • Pour 250 ml hot broth mixture into the toasted brown rice, and stir it constantly or until the moisture is well-absorbed. Repeat the step until the rice becomes tender in your preference (can up to 45 minutes). Please keep the risotto mixture moist; if it gets dry, add hot water if necessary.
  • Add boiled asparagus, boiled soybeans, and micro tomato into the risotto. Keep stirring for another 2-3 minutes.
  • Season the cooked, tender brown rice risotto with salt and pepper.
  • Serve the risotto while hot. Enjoy!

Ingredients
  

  • 195 g Brown Rice (uncooked, short-grain)
  • 5 Soft boiled eggs
  • 960 ml Chicken stock
  • 960 ml Water
  • 1 tbsp Ginger (freshly minced)
  • 1 tbsp Olive oil
  • 1 tbsp Sesame oil
  • 1 tbsp Soy sauce
  • 1 tsp Salt (to taste)
  • Green onion (chopped, for garnish)

Instructions
 

  • Heat olive oil in a saucepan on medium heat. Sauté the chopped ginger for 2-3 minutes or until fragrant.
  • In the same saucepan, add chicken stock, water, brown rice, and salt then bring them to a boil. To make it more effective, cover the saucepan with a lid. Simmer for 1 hour in low heat. Stir the mixture occasionally and make sure everything is mixed well.
  • Make a soft boiled eggs when waiting for the brown rice to cook. Boil the egg in boiling water for 4-5 minutes (or 2-3 minutes if you like it half raw). Rest the boiled egg in ice water to stop the cooking process, and set aside.
  • Check the simmered brown rice. The porridge is ready to serve once it is soft and gooey.
  • How to serve 1 portion of porridge: spoon about 1 cup of porridge mixture to a bowl. Drizzle with ½ teaspoon soy sauce and ½ teaspoon sesame oil. Crack one soft boiled egg at the top, sprinkle it with green onion.

Ingredients
  

  • 200 grams Pork
  • 1 Carrot
  • 4 cups Brown Rice
  • 1 tbsp Salt
  • 1 tbsp Pepper
  • 1 tbsp Salad Oil
  • 700 cc Water

Instructions
 

  • Peel and cut the carrot in rolling wedges and cut the pork into bite size pieces.
  • Add salad oil, fry the pork and stir sufficiently. Add salt and pepper until the color changes.
  • Add 700cc of water and bring to a boil. Turn off the heat and add curry roux.
  • Boil for 10 minutes and enjoy it with your Microwave Brown Rice.

Brown Rice Beef Onigiri

Onigiri or Japanese rice ball is an easy and common rice recipe in Japan. Try using brown rice to shape your onigiri to make it more nutritious. Let’s cook the brown rice first before making onigiri.

Ingredients
  

  • 300 g Brown rice (cooked)
  • 2 tbsp Sushi vinegar (replaceable with rice vinegar)
  • 150 g Beef meat (thinly sliced)
  • 2 pieces Green onion (sliced)
  • 30 g Ginger (thinly sliced)
  • 100 ml Water
  • 3 tbsp Soy sauce
  • 2 tbsp Sugar
  • 1 tbsp Sake
  • 1 tbsp Mirin

Instructions
 

Steps (for beef and green onion filling):

  • Heat water in a pot in medium heat. Add ginger, soy sauce, sugar, sake, and mirin. Bring it to boil.
  • After it boils, add the beef and stir sufficiently. Cover the pot and continue cooking for 20 minutes or until the liquid is almost all gone.
  • Sprinkle the meat with sliced green onion and let it cool.

Steps (for making onigiri):

  • While cooking the meat, prepare the cooked brown rice by mix the rice with rice vinegar.
  • To make onigiri, wet your hands with water and salt. Scoop a palmful amount of rice in one hand. Then make a dent in the center.
  • Add the beef and green onion filling in the center as much as you want.
  • Press and form into a triangle shape, or all ball shape. The onigiri is ready to serve!

Brown Rice Fried Rice with Chicken and Peas

This is an Indonesian-styled fried rice recipe, or also called Nasi Goreng in Indonesian. Any grain of cooked brown rice is acceptable for this comfort food. Choose any other proteins you like if chicken and peas are not in your mood!

Ingredients
  

  • 200 g Brown Rice (cooked)
  • tbsp Sesame oil
  • 2 tbsp Onion (minced)
  • 2 cloves Garlic (minced)
  • 1 cup Peas and diced carrots (replaceable with frozen vegetables)
  • 1 Chicken breast (diced to 1,5 cm pieces)
  • 2 Eggs
  • tbsp Oyster sauce
  • 2 tbsp Worcestershire sauce
  • 2 tbsp Ketchup
  • 2 tbsp Soy sauce
  • ½ tsp Salt and pepper (to taste)

Instructions
 

  • Heat 1 ½ tablespoons of sesame oil in a wok (medium heat). Once hot, add minced onion, peas, and carrots. Sautee for 30 seconds.
  • Set the ingredients to the edges of the wok. Add cut chicken breast already seasoned with salt and pepper. Cook both sides of the chicken for 3-4 minutes or until a nice brown.
  • Once cooked, at minced garlic and Sautee the ingredients for another minute.
  • Set all the ingredients to the edges. Now add eggs in the center and scramble it.
  • Add the cooked brown rice (you can use fresh cooked brown rice or yesterday’s leftovers) to the wok. Mix well with the other ingredients.
  • Add the sauces (Oyster sauce, Worcestershire sauce, ketchup, and soy sauce) at once. Change to low heat if you're afraid of any burn.
  • Add salt and pepper to taste.
  • Mix the nasi goreng until it has a nice aroma. Turn of the heat and immediately serve.

Notes

Try to switch the proteins with other meat like beef, pork, or make a seafood brown rice nasi goreng according to your preference!
