Enjoy the savory and sweet sensation of shio koji. Just by marinating with shio koji for a few hours, you don’t have to add any other seasoning to the chicken. Before grilling, make sure to scrape the koji from the chicken’s surface. Koji sears very easily, so be careful with the heat to prevent too much charring.

Ingredients
  

  • 200 g Chicken Breast (0.5lbs)
  • 2 tbsp Shio Koji Powder
  • 2 tbsp Sake
  • 1 tbsp Grated Ginger
  • 1 tbsp Soy Sauce
  • a little of Oil

Instructions
 

  • Mix Shio Koji, Sake, Grated Ginger, and Soy Sauce in a ziplock. Then, add the Chicken Breast and let it marinate overnight or one day.
  • Heat a little oil in the frying pan over medium heat and grill the meat until a nice brown.
  • Pour the remaining condiment mix to add flavor, and it is done.
