Cucumber Tomato Salad with Umeboshi Vinegar Dressing
Ingredients
Salad
- 4 tomatoes
- 2 cucumbers
- 2 tbsp shredded shiso (perilla) leaves
- ½ red onion (or you can also use 2 shallots, finely sliced)
- 2 umeboshi, seed removed, and cut into small pieces (optional)
Umeboshi Vinegar Dressing
- 4 tbsp umeboshi vinegar (you can use red or white based on your preference)
- 3 tbsp shoyu (soy sauce)
- 4 tbsp your favorite oil (avocado oil, olive oil, canola oil, etc)
- appropriate amount of sesame seeds
Instructions
- Mix well all dressings ingredients in a bowl, then set it aside while you slice the salad ingredients.
- Rince and sliced thinly cucumbers, tomatoes, red onion, and umeboshi (optional).
- Put the cucumbers, tomatoes, red onion, umeboshi, and shredded perilla leaves into a bowl, then pour the dressing.
- Toss until the salad is mixed well. Your Salad is ready to serve.
