Ochazuke is a well-known Japanese comfort food from its long history. The Japanese people tend to eat it when they don’t have an appetite. Umeboshi is a pickled plum fruit that tastes sour and salty. I will say the combination of Umeboshi and Ochazuke is a perfect match if you want something to wake your appetite up. It sounds great, isn’t it?

Umeboshi Ochazuke Recipe

The combination of Ochazuke and Umeboshi is the perfect match to wake your appetite up. Enjoy the Japanese comfort food that is easy to digest, leaving you with a warm feeling in reminisince of Japanese traditional cuisine.

Ingredients
  

Garnishes (Optional)

  • 1 tsp Shredded nori seaweed (kizami nori)
  • 1 tsp Bubu arare (crispy puffed rice pallets)
  • Some Scallion Optional

Instructions
 

  • Prepare the rice: Cook or steam the rice. After the rice is cooked, put 1 serving of rice in a bowl.
  • Steep the sencha green tea: Steep 8g (0.2 oz) sencha loose leaf with 150ml (5 fl oz) hot water at 80°C/176°F for 1 minute.
  • Pour the Brewed Sencha Tea into the rice bowl. (Make sure is enough to cover the rice)
  • Put the Garnishes (Optional) and Umeboshi on top of your rice.
    Umeboshi Ochazuke is ready to be served.

Notes

Feel free to substitute umeboshi with other ingredients like grilled salmon, grilled chicken, etc. for more ochazuke recipe variations.
