Japanese Style Salmon Meunière With Yuzu Kosho Sauce

Yuzu Kosho is a Japanese citrus condiment paste that is made by combining fragrant yuzu zest and the spiciness of chili peppers. It’s not rare to find yuzu kosho that has been fermented for a few days as this fermentation process will deepen the flavor and making it a lot more delicious.

Although it’s great to use yuzu kosho just as a side condiment, the flavorful paste is also amazing when incorporated into a dish. A little amount of yuzu kosho can bring out the best taste profile of your sauce. Even a condiment as simple as mayonnaise can be elevated just by adding a bit of yuzu kosho.

Ingredients
  

  • 2 pieces Fresh Salmon Fillet
  • 10 gr Butter
  • Salt & Pepper as needed
  • 2 tbsp All Purpose Flour
  • 1 tbsp Yuzu Kosho
  • 3 tbsp Mayonnaise
  • 1 tbsp Lemon or Yuzu Juice
  • 1 tbsp Fish or Chicken Stock

Instructions
 

  • Prepare the salmon with a sprinkle of salt and pepper. Let it sit for 10 minutes.
  • Dredge the salmon pieces with all purpose flour until fully coated. Now, prepare the sauce. Mix yuzu kosho, mayonnaise, lemon (or yuzu) juice, and your preferred stock. Stir well until the ingredients are well incorporated.
  • Melt butter on the frying pan and cook the dredged salmon over medium high heat until it has a crispy exterior. Make sure to flip and cook both sides thoroughly.
  • After the fish is fully cooked, move it to a plate and spoon the sauce on top of the fish.
  • You can serve the dish with potato wedges and veggies.
