Gyudon: The Japanese Famous Beef Bowl – Recipes with Dashi Series

Dashi is the basic ingredient of traditional Japanese cuisine. Usually dashi is combined with soy sauce and mirin for the authentic Japanese taste. To make dashi, you can just boil the main ingredients until the flavor is transferred into the stock soup. You can use dried bonito flakes, dried sardine, dried flying fish, kombu kelp, and/or shiitake mushroom as Dashi Ingredients.

Most Japanese Recipe calls for dashi, whether in soup form or in dried powder form. Japanese dishes that usually made using dashi are dashimaki tamago, gyudon (Japanese beef bowl), oyakodon ( Japanese Chicken and egg rice bowl), Miso Soup, etc.

Gyudon Recipe

Gyūdon (牛丼, “beef bowl”), also known as gyūmeshi (牛飯 or 牛めし, “beef [and] rice”). It is a Japanese popular dish, consist of rice topped with beef and onion simmered in seasoning such as dashi, soy sauce, and mirin. Gyudon is commonly eaten with pickled ginger, ground chili pepper, and miso soup as side dish.

In Japan, there are a lot of restaurant sell Gyudon, and many of this restaurant opening their branch in another country. Although considered as fast food, this dish is not unhealthy. This is proven by an experiment commisioned by one of the largest Gyudon restaurant chain in Japan, Yoshinoya.

Based on the experiment, eating gyudon beef daily for three months did not raise the risk of developing lifestyle diseases.

Gyudon (Japanese Beef Bowl)

A Japanese popular dish, consist of rice topped with beef and onion simmered in seasoning such as dashi stock, soy sauce, and mirin. Gyudon is commonly eaten with pickled ginger, ground chili pepper, and miso soup as side dish.

Ingredients
  

  • 100 g Thinly Sliced Beef
  • Onions
  • ¼ green onion/scallion
  • 2 g ginger
  • 1 tbsp shoyu
  • 1 tbsp sake
  • 1 tbsp mirin
  • ½ teaspoon sugar
  • 100 cc Dashi Stock (Combination of Katsuo and Kombu Dashi is commonly used)

Instructions
 

  • Cut the onion into thinly slices, chop the green onion, and cut ginger into needle. Set aside.
  • Heat the pan over medium-high heat and add dashi, sake, sugar, mirin, and soy sauce. Cover the lid and bring the sauce to boil.
  • Once the sauce is boiling, add the sliced onions, and ginger. Spread them out.
  • When the onion is tender, add the beef and cook until no longer red.
  • Serve the meat and sauce over steamed rice. Top with chopped green onion and pickled red ginger.

*If you like to add an egg, serve with onsen tamago.
