We know pancakes, and we love them. But this time’s recipe is different! In this recipe, we use Black Mirin to make the pancake batter. Learn the unique pancake recipe you’ll never know before.
What is Black Mirin?
Black Mirin is a rare mirin that has been aged for 20 years, resulting in an ultimate rich taste of amino acid (umami) flavor and elegant sweetness that resembles black honey and Japanese brown sugar. Its flavor is unexpectedly tasty and incomparable to the regular mirin. The raw ingredients of Black Mirin are only glutinous rice, rice, koji, and sea salt.
Due to its premium taste, difficult manufacturing, and versatile use, the price is much higher than the regular mirin. It’s perfect as a gift and pretty worth it to try for yourself.
Like regular mirin, Black Mirin is suitable for making savory dishes like Yakitori, Teriyaki, Tempura Sauce, or Simmered Eggplant. But this seasoning is also suitable for making desserts like pancakes, cakes, and as ice cream toppings. When used to make desserts, you can expect a nice fluffy texture that is different from other ingredients.
Black Mirin vs Regular Mirin
Both Black Mirin and regular mirin can be made from the same ingredients, resulting in an average of 10-14% alcohol content. But because Black Mirin was preserved more than regular mirin, the taste is surprisingly different.
Difference | Black Mirin | Regular Mirin |

Fermentation time | 20 years | Two months to a few years |
Flavor Profile | Richer umami, elegant sweetness | Subtle sweet flavor |
