Misozuke is a technique of cooking where you pickle or marinade ingredients in miso paste or miso mixture. Misozuke itself means miso-pickled. Not only fish, but you can also marinade all kinds of ingredients from vegetables, beef, even egg yolk.
Preserving fish in miso will not only remove the unwanted odor but also add a rich complex flavor. We recommend you to use good quality miso as it will determine the overall taste.

Miso Marinated Fish (Misozuke)
Ingredients
- 5 Pieces Fish Fillet
- 5 Tbsp Miso
- 1 Tbsp Mirin
- 1 Tsp Cooking Sake
- ¼ Tsp Grated Ginger
Instructions
- Combine the all ingredients and mix thoroughly.
- Spread the miso marinade all over the fish fillet. Make sure to spread evenly.
- Let the marinade to rest overnight.
- After finishing the marinade, grill the fish over medium heat. Be careful because the miso can cause the fish to burn easily.
