A Little Bit About Red Bean Paste

Tsubuan (left) and Koshian (right)

Red bean paste is the foundation of Japanese traditional desserts. It is made by boiling red beans until soft, then mixing it with sugar.

There are two types of red bean paste depending on how it’s made: tsubuan & koshian

Tsubuan is made by mashing boiled red beans and mixing it with sugar. Tsubuan is a chunkier version of red bean paste, so it is served along with the peel. The texture can add a nice bite to the paste.

Koshian, though it has the same making process with tsubuan, later the chunky paste is added with water and strained multiple times to make a smoother consistency.
