A Little Bit About Red Bean Paste

Tsubuan (left) and Koshian (right)

Red bean paste, often called Anko, is a type of traditional Japanese dessert that is made from mashed-up red beans that are added with sugar. Red bean paste desserts can also be found during Japanese tea ceremonies. The sweet taste of red bean paste does complement bitter green tea very well. No wonder the sweet treat is loved for so many years.

There are two types of red bean paste depending on how it’s made: tsubuan & koshian

Tsubuan is made by mashing boiled red beans and mixing it with sugar. Tsubuan is a chunkier version of red bean paste, so it is served along with the peel. The texture can add a nice bite to the paste.

Koshian, though it has the same making process with tsubuan, later the chunky paste is added with water and strained multiple times to make a smoother consistency.
